Instructions to make Keshari paneer basundi in gajar ki katori:
- First in a kadhai warm ghee and add grated carrots, pinch of salt and fry till carrot dries. Now add Jaggery powder, cardamom powder,milk 1/2 cup and cook till all the water dries. Keep cooking in medium flame.
- After grated carrots are cooked transfer it on a plate. Now take two or three small katori and wrap the cling film all over the katori. Now put those carrot halwa and using spoon push the halwa and give a shape of katori. Cover it with another cling film and keep those in freezer for 45 mins.
- Now it's time to make keshari paneer BASUNDI.
- In another pan pour milk and boil it till it's half reduced. In between boiling do scrap those milk residues that stick around and mix it.
- When milk seems half reduced add cardamom powder, kesar strands, fried cashews, kewra and paneer cubes and cook till it starts to thicken.
- When the milk starts to thicken add Sugarlite granules and mix well. Boil for more 5 mins and remove it. Your kesari paneer basundi is ready. Now keep this in refrigerator for 15 mins.
- Now it's time to assemble: First take out the katoris from freezer and remove the cling film. In a plate put carrot halwa katori and then pour paneer basundi upon it. Garnish with kesar and serve chilled.
Basundi is sweet thickened milk, flavored with cardamom and nutmeg, with the addition of dry fruits. Generally milk is reduced on a low flame till it becomes thick. The consistency is not thick like that of Rabri, but more fluid and flowing. Basundi is a popular dessert from the state of Gujarat.
